Curds wont set

I keep running into the same issue when making cheese, my curds won't set properly and turn into a soupy mess instead of firming up. I've tried fresh rennet, followed temperature guidelines, and checked my milk, but nothing seems to work. Could pasteurization be the problem, or am I missing something? Has anyone else dealt with this?

i had a similar mess once and it turned out my thermometer was drunk and reading wrong. pasteurization could be a buzzkill too but i'd bet on the temp first.

yup, I agree with Lunar. you need to check if your milk is ultra pasteurized. If it does, this is a very likely cause.
