hi, I'm quite new to cheesemaking and I tried mixing herbs into my cheddar, but the flavor’s all over the place. Any tips for getting it evenly infused? Any suggestions are welcome!
I think it will help to mix the herbs into the curds right after draining, while it's still warm and loose. I think that way, they spread more evenly. I also found dried herbs work better than fresh since they don’t add extra moisture. Have you tried blending the herbs with a little salt before mixing? That gave me a more balanced taste. Good luck!
