I want to make some cheese!

I'm here because I am also on the homebrew talk forums and got an email suggesting I check this out. I have been wanting to try making cheese for quite a while but haven't ever gotten to it yet. I hope to learn as much as I can here before I really get going with it. I'll probably lurk for a while before making any more posts of my own especially since I haven't made any cheese yet but I hope to have lots to share before too long.
