Practical side of cheese making at home

I've been testing a few cheese making recipes at home with my sister and while paneer and queso fresco worked out I'm not convinced more complex recipes are worth it. What easy soft cheese recipes would you say deliver the best results for the effort?
 
Cream cheese is pretty easy if you’ve got a starter culture. I had good luck with yogurt-based labneh too. Do you want spreadable or something you can slice?

Since I’ve only done paneer and queso fresco, would cream cheese be the faster next step before I try something sliceable?

yeah,cream cheese is a fantastic next step! It's mostly about controlling temperature and draining time. you're already used to pressing the whey out (from paneer), so you'll find the draining/hanging process familiar.
It’s definitely easier than a sliceable cheese that requires rennet and aging.

Okay, 2 votes for cream cheese seals it for us. My sister and I are encouraged knowing the draining part is similar to our paneer projects. We should have time to attempt it over the weekend and report back with our results then.
