frozen milk for cheesemaking

I got a a gallon of milk from my friend who have a farm
I'm so busy right now and don't really have time to make cheese now. but I don't want to waste the milk (I can't drink it all either)
Can I freeze it and use it later for cheesemaking?

yeah, you can! but there will be changes like fat separation and softer curds. it's best for fresh, quick cheeses (like ricotta, chevre, and feta) rather than aged varieties.
do you use cow's or sheep's milk? slow thawing in the fridge and adding calcium chloride helps improve results for cow's milk
 
You can freeze milk, but it may separate a bit when thawed. It’s fine for drinking or baking, but for cheesemaking the texture can be trickier. fresh milk usually gives better curds.
