How to boost flavor in homemade goat cheese?

I’ve just started making cheese with fresh goat milk from my own animals and tried the simple heat-and-acid approach (heated to 82c, added lemon juice and vinegar). The result came out crumbly, almost like a fresh feta. I shared it with someone who might become a customer, and they told me they’d prefer something “stronger.”

I’m trying to figure out what exactly makes goat cheese taste more “goaty.” Is it the breed of goat, the feed they’re on, or more about the cheesemaking process? Right now my goats are on dry grass with pellets since grazing isn’t great. Could that be affecting the flavor? Or is the problem just that the acid method doesn’t give much complexity compared to using starter cultures and letting the cheese age a bit?

I’d appreciate insights from anyone who has made a lot of goat cheese... whether you tweaked diet, switched breeds, or just changed the cheesemaking method to bring out that deeper flavor.
 
From what I’ve seen the stronger flavor in goat cheese usually comes less from the quick acid method and more from using starter cultures and giving the cheese time to age so the proteins and fats break down into more complex flavors.

Breed and feed do play a role since goats on fresh forage often produce milk with more pronounced character compared to animals on pellets or dry hay but the cheesemaking process itself has the biggest impact on how “goaty” the final product tastes.

If you want something bolder, try a cultured chèvre or even a semi-aged style rather than relying only on lemon juice or vinegar, since those methods tend to give you a mild crumbly cheese without much depth.
 
Diet and breed affect the milk’s natural flavor, but fresh acid set cheeses will always taste mild, It'll most likely be better using starter cultures and letting the cheese age a bit to preserve the goat flavor, a short 1 to 2 week aging is okay
