I’ve just started making cheese with fresh goat milk from my own animals and tried the simple heat-and-acid approach (heated to 82c, added lemon juice and vinegar). The result came out crumbly, almost like a fresh feta. I shared it with someone who might become a customer, and they told me they’d prefer something “stronger.”
I’m trying to figure out what exactly makes goat cheese taste more “goaty.” Is it the breed of goat, the feed they’re on, or more about the cheesemaking process? Right now my goats are on dry grass with pellets since grazing isn’t great. Could that be affecting the flavor? Or is the problem just that the acid method doesn’t give much complexity compared to using starter cultures and letting the cheese age a bit?
I’d appreciate insights from anyone who has made a lot of goat cheese... whether you tweaked diet, switched breeds, or just changed the cheesemaking method to bring out that deeper flavor.
