Hey cheesemakers — quick practical question and looking for real-world experience.
I’m making mozzarella (pasteurized whole milk). My basic sequence so far:
Question: Should I cut the curd once and then only stir while slowly heating (what I currently do), or is it recommended to cut again after the 10-minute settling/healing period? Which approach gives a stronger protein matrix (less oil when melted) for mozzarella?

Any experiment results, pH targets for stretching, or simple rules you follow would be hugely appreciated. Thanks!
I’m making mozzarella (pasteurized whole milk). My basic sequence so far:
- Add starter culture, let ripen ~45 min at 38°C.
- Add rennet, wait ~40 min for a clean break.
- Cut curd into large cubes and let them rest/heal for about 10 minutes.
- After that 10 min I cut again in small cubes then I start stirring and slowly heat the curds up to ~43°C.

- Milk: pasteurized whole milk (no added cream)
- Rennet: , standard strength
- Temps: culture at ~38°C, rennet set ~40 min, heat from ~36°C → 43–45°C slowly
- I cut curds into roughly 4cm cubes the first time then 1cm
- I worry cutting again will “shatter” curds and cause too much whey/fat loss.
- If I don’t cut again and I heat too fast, I get oil-off.
- I want best practice for a stretchable, non-oily mozzarella.
