My holiday wheel of Gouda aged just in time for Christmas dinner, and now I’m itching to try something new for the new year. Thinking about tackling a washed rind in January. What’s everyone’s first cheese project of 2026?
A washed rind is a bold January move, love it. I’m planning to start the year with a simple chevre. low effort, fast payoff, and great for getting back into the groove after the holidays.
