Beginner lasagna cheese

I’m trying my hand at cheesemaking for the first time. I want to make something simple for lasagna, but I only have pasteurized milk, vinegar, and a yogurt culture. No raw milk or rennet. What’s a good starter cheese to experiment with? A simple, budget-friendly option I could try would be great!
 
I say go for a simple paneer‑style cheese. Heat the milk, add vinegar, strain, and you’ve got a mild, budget‑friendly cheese that works great in pasta dishes.
