Hard cheese struggles

My first big success was mozzarella, it stretched perfectly and my family loved it. Then I tried cheddar and ran into problems with the taste and texture. Do you find soft cheeses easier to make? What’s been the toughest part for you when moving on to hard cheeses?
 
Mozzarella is definitely one of the easier wins. Soft cheeses usually require less aging and fewer steps. Hard cheeses like cheddar can be tricky because they need precise pH control and months of aging.
