Jalapeno Jack

I’m new to cheese making and just pulled off my first Monterey Jack. Now I want to try a jalapeno version. Do you roast the peppers first or toss them in raw? Looking for flavor without too much moisture.

Let me know what’s worked for you or what to avoid, I’m all ears (and curds). Thanks!
 
Tried both ways but roasting the peppers gave the cheese a nicer texture and richer flavor. When I used raw ones, the cheese turned out a bit too moist. Roasting and drying them off with a paper towel before mixing works well.

yeah, you shouldn't put the raw ones, it wouldn't work. instead, choose the dried or precooked peppers, these are more effective
