looking for stretchy flavorful cheese recipe

I've been on the hunt for a cheese that's similar to Akawi (Middle Eastern style). Tried digging up recipes but most are vague and skip over the details that actually matter, like how to get that stretchy texture while still keeping the flavor full. Has anyone here tried making Akawi at home or found a good recipe for something close? Even if it's not exact, I'd be happy with a cheese that melts and stretches like that but doesn't just taste bland.
 
I experienced Akawi cheese after a trip to Amman. Loved the stretchy cheese on manakish. At home, I mix mozzarella with a little halloumi and some cream. It stretches well and has a nice salty taste. If you want to make it yourself, try using rennet and soak the cheese in salty water early on. That helps with the texture and flavor.

hi @Rico_Banderas I helped my friend make an akawi cheese before, her family is middle eastern.
so, the key to that signature Akawi texture is the brining and stacking/pressing. it helps lock in the moisture and creates that layered stretch.
you need to let it sit in brine for a good day or two. Also, try a higher fat milk if you can, like sheep or goat, as cow's milk sometimes yields a blander result
