Try a basic paneer or queso fresco, they're very forgiving and only need milk, rennet (or lemon juice for paneer), and salt. Perfect for a first go, trust me
Try making ricotta. Just heat up 4 quarts of milk to 180°F, then stir in 1/4 teaspoon of liquid rennet. Let it rest for about 15 minutes so it can set. After that, cut the solid part that forms, strain out the liquid, and add some salt to give it some taste. You'll be surprised how good it is
