I feel so lucky today, my neighbour who has a dairy farm just gave me a couple of gallons of raw milk. I really want to make a hard cheese, but it's hard to find time because I'm working full time.
I want to know what’s the quickest hard cheese to make?
what's the best way to process and preserve this milk without staying up all night?

if you like faux cheddar, you can make it in about an hour. I think it's great, it's savory and has a golden color, although it's not a true cheddar

try a Monterey Jack or a Caerphilly. These cheeses have a simpler make process than cheddar and are ready to eat much sooner.
