What to do with Feta?

Just curious what interesting ideas people have for a batch of feta. I usually just eat it as a snack or on salads. Any other more creative ideas? Thanks in advance from a cheese-newby.
 
greek food. Spanikopita (I like the triangles, but the casserole is easier). Don't be a dummy like me and roll your own phyllo dough... not worth it. It's available frozen at your grocer.

Lamb/feta meatballs, etc.

It stores for a long time in the fridge. I just salted mine, but I think some people store it in oil or water or similar.

Greek salad is also a winner for using lots of feta. Get the right olives (kalamata), beets, tomatoes, cukes, onions, some italian dressing, feta chunks, mixed into chopped lettuce. All of that goes on top of a blob of potato salad. For protein, cold shrimp and/or anchovies, or gryo meat. Great, now I made myself hungry.
