Which acid to use for ricotta

My grandma always used lemon juice for ricotta, but I saw a modern recipe calling for tartaric acid. Has anyone compared the results? Do these acids change flavor or texture, or can they be swapped?
 
Hello @rickieee! I’ve played with both, and they each have their own vibe. Lemon juice gives you that soft, fluffy “grandma ricotta” with just the tiniest hint of citrus if you’re paying attention.

Tartaric acid is more of a no‑nonsense option since it sets the curd fast and firm, so the texture comes out a bit tighter and more predictable. You can swap them, but lemon strength varies from fruit to fruit while tartaric acid is the same every time, which is why modern recipes lean on it.
