I just started experimenting with mozzarella and paneer and it's been super fun! But my tiny kitchen doesn’t have space for big equipment. Can I make hard cheeses without a press, or should I stick to soft ones for now? thanks everyone!

Hard cheeses usually need a press to get the right texture, but you can improvise with weights like a pot filled with water. Still, soft cheeses like paneer, ricotta, and mozzarella are way easier in a small kitchen.
